Vouette & Sorbee Fidele Extra Brut

Beautiful soft saline notes. Rich toast and white pepper with bitter forest fruit. Incredible length mid to late palate. Leaves a spectacular lemon drops on the finish. Lemon rind. Lemoncello. Lovely deep rose gold colour. Incredible sugar when the mousse softens. Red fruits starts to come through after an hour or so…redcurrant, blackcurrant. There is a seductive bitterness to this that evolves beautifully with air. Lovely texture a touch thin but well layered.
